Honey Glazed Chicken




Preparation Time : 10 minutes (excluding marinating of ginger for 6 hours & chicken for 1 hour)
Cooking Time : 20 minutes

Ingredients
1/2 Chicken, cut into pieces with skin removed
Cooking Oil
Light soy sauce
Salt
1 stalk of chinese parsley
1 stalk of spring onions
Cornflour
6 slices of young ginger
White vinegar
White castor sugar
Water
Chinese cooking wine (or Shaoxing Wine)

Method
to marinate the ginger
Marinate the slices of young ginger with white vinegar and white castor sugar for at least 6 hours.

to marinate the chicken
Marinate the chicken pieces with 2 tablespoon of light soy sauce and 2 tablespoon of cornflour for an hour.

for seasoning
2 tablespoon of honey
2 tablespoon of light soy sauce
1/2 teaspoon of salt

1. Add cooking oil sufficient to fry the chicken pieces. Fry till golden brown and crispy on the outside and remove to set aside on a sieve or on kitchen towels.
2. Heat pan, add 1 teaspoon of cooking oil. Add in pieces of marinated ginger to fry till golden brown.
3. Add in the mixture of seasoning (add some water to mix with the remains of the seasoning and pour them back into the pan) and 1/2 Chinese rice bowl of Chinese wine until it comes to a boil under low heat.
4. Add in chicken and stir fry till the sauce thickens.
5. Remove from pan and garnish with spring onions and Chinese parsley.
