Stir Fry Chicken Slices with Cashew Nuts and Basil Leaves


Preparation Time: 15 minutes
Cooking Time: 15 minutes

Ingredients
1 teaspoon of chopped garlic
1/2 white onion, sliced
1 chicken breast, sliced
1 big chilli, sliced slanted
1 handful of roasted unsalted cashew nuts
1 handful of basil leaves
1 tablespoon of water

To marinate the chicken slices:
A mixture of :
1 tablespoon of Shaoxing wine
1/2 teaspoon of white sugar
1 tablespoon of light soy sauce
1 teaspoon of cooking oil

Method
1. In a hot pan, heat cooking oil and add in onion and chopped garlic and fry till fragrant and golden brown.
2. Add in the marinated sliced chicken and stir fry till cooked (when all the chicken turns white)
3. Add in cashew nuts, basil leaves and chilli and stir fry
4. Pour 1 tablespoon of water over the chicken slices and cover the pan with a lid to let it simmer for 1 minute.
5. Remove from pan and serve. (PS: If you like to garnish your dish with basil leaf, make sure that it is cooler before you put the fresh leaf on it. Otherwise, the heat from the dish will cause the basil leaf to turn black.)
