Shredded Chicken Porridge

Preparation Time: 5 minutes 
Cooking Time: 60 minutes

Ingredients
1/2 chicken breast
Water
Chicken stock (either home-made or prepacked)
Spring Onions
Fried Onions
Sesame Oil
1 cup of rice
Salt (optional - if your stock is from the supermarket, you can skip this step)

Method
1. Wash rice and pour 5 rice bowls of chicken stock into rice cooker and select "Porridge" mode to set to cook.
2. In a separate small pot, fill the pot to half with water and bring it to boil.
3. Put whole chicken breast into the boiling water and lower heat and let it simmer for 15 minutes till fully cooked.
4. Drain water and let chicken cool and shredded it into thin slices and set aside.
5. Put in 3/4 of shredded chicken into the rice cooker after 45 minutes of cooking time and stir to separate the chicken.
6. Once porridge is ready, garnish with remaining shredded chicken, chopped spring onion and fried spring onion with dash of sesame oil to serve.
