Mixed Rice with Chinese Sausages, Chicken Slices and Mushrooms
The methods and ingredients here are all the same if you would cook yam rice. Just replace with sliced chicken fillet with yam cubes. This is a very versatile dish, because you can add any other meats you like - I've tried it with luncheon meat cubes too! For beef lovers, I'm sure thin slices or dices of beef fillet will be equally yummy.
Preparation Time: 30 minutes
Cooking Time: 10 minutes + 45 minutes of rice cooker time
Ingredients
Dark soy sauce
Light soy sauce
White sugar
Oyster sauce
Sesame oil
Cooking oil
Oil from fried shallots
Lettuce, cut in slices
Chopped garlic
1 glove of spring onion, chopped
1 stalk of chinese parsley
1 chicken fillet, sliced and marinated with a teaspoon of light soy sauce
Fried shallots (fried from small onions which are sliced)
1 big chilli, removed seeds and sliced
1 chinese sausage, steamed, remove the skin and sliced
1 cup of rice, uncooked but washed
1 bowl of chicken stock
1 tablespoonful of chinese mushrooms, soaked and drained then sliced (do not throw away the water)
1 tablespoonful of dried shrimps, soaked and drained (do not throw away the water)
Method
1. In a small bowl, mix in 2 tablespoons of oyster sauce and 1 tablespoon of dark soy sauce, sesame oil, light soy sauce and sugar, fried shallot oil. Taste to see if you like it, and adjust to what you like better.
2. In a hot wok, add 1 tablespoon of cooking oil. Add in chopped garlic and fry till golden brown.
3. Add in shrimps and stir fry until they are golden brown with a nice fragrant.
4. Add in sliced chicken, mushrooms, sliced sausages into the wok and fry, followed by the mixture of seasoning. Fry till they are cooked.
5. Add in uncooked rice and stir, coating the rice with the seasoning.
6. Pour in the water from the shrimps and mushrooms, and stir fry till the water is almost gone.
7. Transfer the rice mixture into rice cooker and pour 1 bowl of chicken stock into it. Add more if it is insufficient just enough to cover the rice but be careful not to pour too much, otherwise the rice will turn out too soft.
8. Put to cook, just as cooking normal white rice.
9. Once cooked, let it settle for 30 minutes before serving.
10. Garnish with sliced cut chilli, fried onions, parsley, cut lettuce and spring onions to serve.
