Stir Fry Pork Bee Hoon
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Ingredients
1 medium can of pork ribs/pork trotters, removed from can and shredded to small chunks of meat but do not throw away the oil
1 teaspoon of chopped garlic
Cooking Oil
1 packet of green vegetables, cut into portions (you can choose your favourite greens, but the leafy ones goes better for this dish)
Fried sliced onions
Sliced red chilies, with seeds removed
1 packet of dried bee hoon
Light soy sauce
Water
Method
1. Remove 1/2 packet of the bee hoon and soak it in hot water for 15 minutes before cooking.
2. Heat 1 teaspoon of cooking oil in frying pan and add chopped garlic and stir fry till golden brown.
3. Add chunks of pork into the pan. Be prepared to use the lid of the pan to prevent oil from splattering outwards. Stir fry and turn heat to low.
4. Drain bee hoon and transfer them into the pan. You can use a pair of chopsticks to stir the bee hoon thoroughly, spreading the pork.
5. Drizzle 4 teaspoon of the pork oil from the can and another 2 tablespoon of light soy sauce all over the pan and stir. Add more soy sauce to taste if desired.
6. As the bee hoon becomes softer, add 1/2 rice bowl of water all over the bee hoon and stir fry. Cover lid and simmer in low heat for 2 minutes. At this point, you can choose to cut the bee hoon short.
7. Lift lid and stir fry. Remove heat and garnish with sliced chili and fried sliced onions to serve.
