Steamed Chicken in Ginger Sauce

Ingredients
for the Chicken
1/2 chicken, chopped into pieces
1 stalk of spring onion with scallion (cut into 3 parts)
2 slices of young ginger
Salt
Sugar
for the Ginger Sauce
1 stalk of spring onion, chopped
Cooking Oil
3 teaspoon of peeled and minced young ginger
Sesame Oil
Chinese Cooking Wine (Hua Tiao Jiu)
Method
for the Chicken
1. Put a pot of water to boil and add ginger, stalk of spring onion and 1 teaspoon of salt and 1 teaspoon of sugar.
2. Lower fire to medium, and add the pieces of chicken, reduce heat to low after the water boils. Let it cook gently for 10 minutes.
3. Drain the chicken pieces in a drainer, allowing the juices of the chicken dripping back into the pot.
4. Put the chicken pieces back into the same pot of water and let it cook under low fire for another 15 minutes.
5. Transfer chicken pieces into a bowl of cold water and let it soak for 20 minutes.
6. Remove and arrange neatly on serving plate.
for the Garlic Sauce
1. Heat 1 teaspoon of cooking oil into pan and fry chopped ginger and spring onions until fragrant.
2. Add in 1/2 teaspoon of sesame oil and 1 teaspoon of Hua Tiao Chinese cooking wine.
3. Stir and add 1/2 teaspoon of salt and 1/2 teaspoon of sugar to taste.
3. Pour ginger sauce over the cooked chicken pieces and serve.
