Slow Cook Potato, Carrot and Pork Rib Soup
Preparation Time: 15 mins
Cooking Time: 45 mins
There are other shortcuts to making soup, like using ready-made stock or using just plain water and cube essence, but I prefer to use the traditional way of making soup. After all, as home cooks, we decide what goes into the final product that gets digested into our system.
Ingredients
6 pieces of Pork Ribs
4 pieces of Pork Bones
1 medium size carrot, cut into thick slanted strips.
4 medium size potatoes, cut into quarters or to your preferred size.
Chinese Parsley
Spring Onion
Dash of Salt
Method
For best tasting soup, always prepare your soup base way ahead. I prepare my soup base in the morning before I leave for work. If you are rushing for time, you can boil water in the flask and pour the water together with the pork bones directly into the slow cooker and select auto mode. Add the rest of the ingredients immediately when you are home, turn the mode back to high and cook for 45 minutes.
1. Wash pork ribs and bones. With a pot of boiling water (about 500ml), put in the bones and ribs.
2. Remove the ribs, and pour the water with the pork bones into a slow cooker and let it simmer under slow heat.
3. An hour before meal, put in carrot, potatoes and the cooked pork ribs into the slow cooker. Turn up the heat to high.
4. Add salt to taste (About 1/2 tablespoon).
5. Garnish with chinese parsley and cut spring onion.
