Fried Chinese Mee Siam
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Ingredients
1/4 of bee hoon, soaked in hot water for 5 minutes and drained
1/2 rice bowl of thinly sliced pork fillet
2 eggs
1/2 rice bowl of small prawns, peeled
1/2 rice bowl of beans sprout, roots removed
Mee siam paste
1/2 teaspoon of chili paste (depends on how much you like your dish spicy. Otherwise, you can opt out of this totally)
1 teaspoon of chopped garlic
Salt
Sugar
2 small lime
Light soy sauce
Cooking oil
Chopped spring onions
Fried onions
Method
for the Mee Siam Paste
1. Mix 2 tablespoon of mee siam paste with 1/2 teaspoon of chili paste, 2 small lime juices (seeds removed), 1/2 teaspoon of sugar and pinch of of salt and 1 tablespoon of light soy sauce in a bowl and stir well. Remember to taste to ensure you like what you like).
for the Dish
1. Heat 1 tablespoon of cooking oil in frying pan and add in chopped garlic to stir fry till golden brown.
2. Add in pork slices and prawns, stir fry till prawns are red and pork slices are white.
3. Remove from pan, and add in 1 teaspoon of cooking oil.
4. Break 2 eggs into pan when cooking oil is hot, and stir the eggs until they are cooked. Add 1 teaspoon of oil if pan is dry.
5. Add back the cooked pork slices and prawns, followed by mee siam paste mixture.
6. Add in soaked bee hoon and stir fry thoroughly, turning up the fire for 1 minute, and then lower the heat thereafter.
7. Using pair of kitchen scissors, cut the bee hoon into shorter pieces.
8. Garnish with chopped spring onions and fried onions and serve.
