Dark Soy Sauce Chicken Soup


Preparation Time: 15 minutes
Cooking Time: 45 minutes (Slow Cooker)

Ingredients
1/2 Chicken, chopped into pieces
2 whole hardboil eggs
6 pieces of dried chinese mushrooms (if they are the larger ones, you can opt for fewer pieces but cut them into halves.) Remove stalk and soak them for 1 hour before cooking.
1/2 packet of tao pok
Dark soy sauce
Light soy sauce
Water
Chicken Stock (you can opt for ready made ones, or make them yourself.)

Method
1. Parboil the chicken pieces in a pot of boiling water to remove blood and scum.
2. Drain the chicken pieces, set aside.
3. Strain the chicken stock that was used to parboil the chicken, and pour them into a slow cooker.
4. Add the chicken, hard boil eggs, tao pok and mushrooms into the slow cooker.
5. Add 1 rice bowl of dark sauce and stir the soup.
6. Turn heat to high until the soup boils, and turn heat to slow (or auto) for 45 minutes.
7. Add salt to taste, if required.
8. Garnish with chinese parsley to serve.
